"Goodbye, meat"

Carnival in Roman Catholic countries - it is, in fact, a direct analogue of the Orthodox Shrovetide. Both are celebrated before Lent. This custom was borrowed from the popular churches of pagan holidays. And the word "Carnival", according to one version, means "Goodbye, meat" (from Latin 'carne vale').
